My Lotus cookie butter addiction is well known, and I have a half a dozen recipes dedicated to it on my blog. So why this one? This drink is unlike anything you’ve ever had. Rich and Creamy Lotus Biscoff Drink has a little spice with the warm caramel notes in a rich, frothy cream drink.

This recipe came to me in a dream, literally. Maybe it’s just pregnancy cravings talking, but I had a dream of this amazing rich and creamy drink that was like hot chocolate but instead it was cookie butter. My dream was so satisfying. The next day I set out to make it a reality, and here it is! And it is all of the warm, happy feelings that I was hoping for. If you are not a tremendous chocolate fan, as I am not, this Rich and Creamy Lotus Biscoff Drink is the ideal alternative. Winter will never be the same.
In this recipe, I use palm sugar because it brings a natural caramel note which enhances the cookie butter flavor. I also use whole milk for a rich and creamy texture. Either can be easily substituted if that is your preference.
You can pull this Rich and Creamy Lotus Biscoff Drink together in only a few minutes and serve with or without the garnishing touches! Personally I’m a sucker for plating and garnish. Ingredients:
- 2 Tablespoons Lotus Cookie Butter
- 1 teaspoon Palm Sugar (can sub regular sugar)
- 8 ounces Whole Milk
Instructions:
- Melt the Lotus Cookie Butter on med-low heat until smooth.
- Add the sugar and milk. Whisk continuously until heated through. DO NOT BOIL. You do not want to walk away from this or let it come to a boil. This will cause the cookie butter to seize and the texture to be unpleasant. Not to mention the flavor of the milk changes completely after being boiled.
- Serve Immediately. For garnish, you can melt an extra teaspoon of Lotus Cookie Butter, then top your drink with whipped cream and the melted Lotus cookie butter.

- 8 ounces Whole Milk
