It's evening and the kids are (finally) asleep.  Now it's mommy-time.  I relax with a cozy blanket and warm cup of this spicy stovetop chai.  You may not have all the spices on hand...but trust me...you'll be stocking them all winter for this.

Ingredients

  • 8 ounces Water
  • 1 bag Black Tea
  • 1 small Cinnamon Stick
  • 1 Whole Star Anise
  • 1 teaspoon Whole Cloves
  • ¼ teaspoon Whole Black Peppercorns
  • ¼ teaspoon Ground Ginger
  • ¼ teaspoon Whole Cardamom
  • 4 ounces Milk
  • Honey to Taste

Optional Garnish:

  • Whipped Cream
  • Pinch of Chinese 5 Spice Powder

Instructions

  • Put Water, Black Tea, Cinnamon, Star Anise, Cloves, Peppercorns, Ginger and Cardamom into a small saucepan at high heat.
  • Bring to a boil, then lower heat to a strong simmer. Let simmer for 15 minutes with no lid.
  • Add Honey and Milk. Stir to heat through.
  • Remove from heat, strain and serve!

Notes

Make Stovetop Chai for One fresh and serve immediately.  Yes, you can refrigerate and reheat, but it just isn't as good.  If you want to double the recipe to make Stovetop Chai for Two (or a double chai for you, I won't tell! ) do NOT double the water.  Increase the water by 6 oz and double everything else.
