Sweet Potato Latkes

  • 4 Medium Sweet Potatoes peeled and shredded
  • 6 Eggs
  • 1 teaspoon Kosher Salt
  • ½ teaspoon Black Pepper
  • 1 teaspoon Sage
  • Oil for frying


  • Beat the Eggs, Kosher Salt, Black Pepper and Sage.
  • Stir in the Sweet Potatoes
  • Heat ½ inch of oil in a frying pan.
  • Fry the latkes in batches. ¼ cup of mixture per latke. Cook until golden brown on both sides, turning only once. When you scoop each batch, freshly stir the mixture to re-coat with egg. Otherwise, the egg settles at the bottom of your bowl. This latke does not get too wet, so there is no need to squeeze anything.



Serving suggestion: Serve hot and fresh! I topped mine with brisket, but you can top them with the traditional sour cream or applesauce. If you want to make them ahead, freeze them in individual patties and reheat either in the oven or with a quick fry in oil.
