Fresh Summer Slaw with ACV Dressing
Fresh Summer Slaw combines crisp, fresh summer vegetables lightly tossed in an apple cider vinegar dressing for a perfect balance of tart and sweet flavors.
- 2 Cups Carrots cut into matchsticks
- 2 Cups Pea Shoots
- 1 Cups Parsnips cut into matchsticks
- 2 Tablespoons Apple Cider Vinegar
- 2 Tablespoons Olive Oil
- 2 Tablespoons Honey
- ¼ teaspoons Kosher Salt
- ⅛ teaspoons Black Pepper
Combine the Carrots, Pea Shoots, and Parsnips into a large bowl. Set aside.
In a small bowl, add Apple Cider Vinegar, Olive Oil, Honey, Kosher Salt, Black Pepper and whisk until well combined.
Drizzle the dressing ingredients over the vegetables, and toss to evenly coat.
