Fresh Summer Slaw combines crisp, fresh summer vegetables lightly tossed in an apple cider vinegar dressing for a perfect balance of tart and sweet flavors.

  • 2 Cups Carrots cut into matchsticks
  • 2 Cups Pea Shoots
  • 1 Cups Parsnips cut into matchsticks
  • 2 Tablespoons Apple Cider Vinegar
  • 2 Tablespoons Olive Oil
  • 2 Tablespoons Honey
  • ¼ teaspoons Kosher Salt
  • teaspoons Black Pepper


  • Combine the Carrots, Pea Shoots, and Parsnips into a large bowl. Set aside.
  • In a small bowl, add Apple Cider Vinegar, Olive Oil, Honey, Kosher Salt, Black Pepper and whisk until well combined.
  • Drizzle the dressing ingredients over the vegetables, and toss to evenly coat.
