Fresh Fruit Compote

This super simple fresh fruit compote recipe turns ripe fruit into a warm, soft dessert that’s healthy and full of flavor.

Ever go shopping and see fruit on sale, so you buy way too much?  I do this. Especially if there is gorgeous looking fruit at the bulk store.  I recently bought up a huge bulk box of the most gorgeous peaches. When I do this I love to make the Jewish classic, fruit compote.  

Fruit compote can be made in bulk and jarred or frozen for later use.  I like to freeze up a big batch and then pull it out when I need a last minute dessert.  I’ll warm it up and serve it with whipped cream or a scoop of ice cream. And it comes in at only 4 Weight Watchers Freestyle points per serving!  So you can enjoy this treat without blowing your diet. 😉

**Weight Watchers Freestyle Points-4/serving.  Weight Watchers points are based on using the exact ingredients and quantities that I used.

Serves: 6 Prep Time: 10 Minutes Cook Time: 1 Hour

Ingredients:

  • 4 Cups of Fresh Fruit, peeled and cut into chunks
  • 1 Tablespoon Lemon Juice
  • ½ Cups Sugar (can sub with coconut palm sugar)
  • ½ Cups Water

Instructions:

  1. Preheat oven to 350.
  2. Combine all ingredients in an 8x8 pan until evenly mixed.
  3. Cover and bake for an hour at 350.
