My husband loves eggs for breakfast.  Like, the day is just not as good if he can’t have eggs for breakfast.  So, I typically get up early to make breakfast for everyone, and I was looking for a healthy, quick way to prepare eggs that wasn’t boring and would be filling enough to get him through a busy work morning.  

This sandwich was the hands-down winner.  My husband now gets excited for breakfast, and if I’m making eggs any other way he asks me, “No Breakfast Sandwich today?”  

I’ve had cheap fast-food breakfast sandwiches before, and my honest opinion is always that they are barely worth the money.  Crispy Lox and Egg Breakfast Sandwich includes all of the delicious layers, but in a more flavorful way. I love that I can have a healthy breakfast sandwich with all the appeal of takeout in only 15 minutes without ever leaving my house.  

Whatever size brood you have to cook for, this sandwich will have you full and on your way fast.

**Weight Watchers Freestyle Points-5/serving.  Weight Watchers points are based on using the exact ingredients and quantities that I used.  Please calculate for yourself based on what type of cheese and english muffin you use. For this recipe, I used Haolam Slims cheese (2 pts) and Thomas Multigrain Light English Muffin (3pts).

Serves: 1 Prep Time: 5 Minutes Cook Time: 10 Minutes

Ingredients:

  • 1 English Muffin
  • 1 Slice Lox (Smoked Salmon)
  • Spray Oil
  • 2 Eggs
  • Kosher Salt
  • Black Pepper
  • 1 Slice Cheese

Instructions: 

  1. Preheat a medium skillet on med-high heat.  Split the English muffin and start it in the toaster.  Hint: Use a light English Muffin for fewer carbs.
  2. Fry the Lox turning once until golden brown on both sides. Set Aside.
  3. Now, turn the heat down to medium or med-low.  Spray the skillet with oil. If using ring molds for your eggs, place those into the skillet and spray them also.  
  4. Put the eggs into the skillet.  Add Kosher Salt and Black Pepper to taste.  Gently break the yolks with your spatula.
  5. Fry until the whites are mostly tight, then flip and fry on the other side until cooked through.
  6. Now, assemble your sandwich: Bottom Muffin, Egg, Egg, Cheese, Lox, Top Muffin.  
  7. Enjoy this sandwich hot and fresh.  It can be saved in the refrigerator and reheated within a few days.  The Lox are the crispest when served fresh.
