Months in quarantine have necessitated a different style of cooking from what I’m used to. Anything that I can quickly prep and pop in the oven is a total winner. So with that in mind, I have created this Apple Cinnamon Baked Oatmeal recipe. It’s so easy to make.
Don’t worry, you won’t have to slice any apples. This recipe uses applesauce. It’s the only way I can get my son to eat apples. I have to hide them in recipes in the form of applesauce inside recipes like this.
Apple Cinnamon Baked Oatmeal comes out like bars or a cake. I tell my kids it’s a breakfast oat cake, and that seems to sell it for them. It’s just sweet enough. Ingredients:
- 2 Cups Rolled Oats
- 1 teaspoon Baking Soda
- ½ Cups Brown Sugar
- 1 teaspoon Cinnamon
- ¼ teaspoons Kosher Salt
- ¼ Cups Butter, melted
- 1 Egg
- ⅓ Cups Unsweetened Applesauce
- 1 Cup Milk
Instructions:
- Lightly grease an 8x8 baking dish. Preheat the oven to 350 degrees.
- Mix all ingredients together in a medium sized mixing bowl.
- Pour the batter into the prepared baking dish. Smooth it out evenly.
- Bake uncovered for 50-60 minutes at 350 degrees until oatmeal is dried out with just a bit of crust over the top.
Notes: Apple Cinnamon Baked Oatmeal lasts 4-5 days in the refrigerator. It can be frozen and reheated for use. This dish can be served hot or cold.
