It’s Chanukah!! Are you frying every variety of latke? I know I am. These Sweet Potato Latkes are healthy, gluten-free, paleo and absolutely delicious!

This recipe came about because I have a tendency to make things up as I go. So that’s what I did. I was making up random latkes for Chanukah and posting pictures on my Instagram Stories. And the votes are in that you want to see the recipe for my sweet potato latkes.
So, I duplicated it. I wrote it up. I filmed and photographed and here it is! These latkes are pretty easy to make. And they are flavorful and guilt-free. If you even prefer to bake them, you could. Just spray the pan and then spray the tops of each latke before baking.

Ingredients:
- 4 Medium Sweet Potatoes, peeled and shredded
- 6 Eggs
- 1 teaspoon Kosher Salt
- ½ teaspoon Black Pepper
- 1 teaspoon Sage
- Oil for frying
Instructions:
- Beat the Eggs, Kosher Salt, Black Pepper and Sage.
- Stir in the Sweet Potatoes
- Heat ½ inch of oil in a frying pan.
- Fry the latkes in batches. ¼ cup of mixture per latke. Cook until golden brown on both sides, turning only once. When you scoop each batch, freshly stir the mixture to re-coat with egg. Otherwise, the egg settles at the bottom of your bowl. This latke does not get too wet, so there is no need to squeeze anything.
- Serving suggestion: Serve hot and fresh! I topped mine with brisket, but you can top them with the traditional sour cream or applesauce. If you want to make them ahead, freeze them in individual patties and reheat either in the oven or with a quick fry in oil.
