Pizza Bourekas are flaky little pockets of cheesy pizza goodness. They take only 40 minutes to prepare and are great for a grab and go.

These tasty triangles have already been pleasing palates the last few weeks. Finally, my Pizza Bourekas recipe is available to all. I know we all love to stuff things inside dough. So dig in and enjoy!
These pizza pockets should be served immediately. They can be refrigerated and reheated a few days later, but they will not retain crispness. When cooling for kids, be sure to cut in half. The outside may feel cool, but the pizza sauce inside could be hot enough to cause burns.
Pizza Bourekas are a quick and delicious lunch that even the kids will go crazy for!

Ingredients:
- 10 5” Puff Pastry Squares
- ½ Cups Pizza Sauce
- ¼ Cups shredded Mozzarella
- ¼ Cups shredded Cheddar
- ¼ Cups shredded Parmesan
- 1 teaspoon Oregano
- 1 Egg, beaten
Instructions:
- Let Puff Pastry Squares defrost for 10 minutes. Preheat oven to 375.
- Place the squares at a diagonal to you on the counterDivide the Pizza Sauce, Mozzarella, and Cheddar evenly between the squares. Place all of them in the center of each pastry piece.
- Divide the Pizza Sauce, Mozzarella, and Cheddar evenly between the squares. Place all of them in the center of each pastry piece.
- Dip your finger in water and run it over the edges of each pastry square. Then pick up two opposite corners and pinch together, then pinch down the sides forming a sealed triangle.
- Place the triangles on a parchment covered Sheetpan. Brush each lightly with beaten Egg. Sprinkle the tops with Oregano.
- Bake for 20-25 minutes at 375 until golden and fully puffed up.
- While hot, top with Parmesan and Serve. These can be refrigerated and warmed in the oven later, though they are best fresh.
