As a crazy busy mom, I survive on very little sleep and a whole lot of coffee. Honesty, I drink way too much of it. However, that’s great for you because I’ve become a bit of a connoisseur of coffee and coffee drinks. I start everyday with a hot coffee and have an iced or blended coffee almost every afternoon. I’ve tried a lot of flavors, and I have a cycle of my favorites that I typically rotate through. Cookie butter tops that list.
I have been making Lotus Biscoff Iced Coffee everyday for several weeks now. This addictive coffee drink is creamy and indulgent. It’s not too sweet, but you can always make it a little sweeter if that’s how you like it 🙂 I’ve even thrown it into a blender to enjoy a frozen coffee drink, topped with sweet whipped cream.

Ingredients:
- ½ Cups Ice
- ½ Cups Milk
- ½ Tablespoons Instant Coffee
- ¼ Cups Boiling Water
- 1 Tablespoon Cookie Butter
- 1 teaspoon Maple Syrup or Simple Syrup
Instructions:
- Pour Ice and Milk into a 12 oz Cup.
- Dissolve Instant Coffee into Boiling Water
- Mix Cookie Butter and Syrup into the hot coffee mixture
- Pour hot mixture into the waiting cup of milk and ice. Stir gently.
- Top with whipped cream and melted cookie butter if desired.
