I’m always on the lookout for good-looking produce. I scour my local organic store looking for the brightest colors and freshest finds. I love to take it home and just let the flavors of the vegetables guide my meal making. And that is exactly how this Fresh Summer Slaw was born.
Bright green and perfectly crisp pea shoots called out to me from the rainbow of fresh vegetables. I took those babies home. This recipe came together very easily after that. The first time I served it, I never expected to write it up as anything. It was just me making dinner. But the flavor was so unbelievable, I had to share it with all of you!
I am surprised by how versatile this Fresh Summer Slaw has been. I have used it to top burgers, as a side salad with fish and even eaten just a big bowl of it for lunch.

- ⅛ teaspoons Black Pepper

- Combine the Carrots, Pea Shoots, and Parsnips into a large bowl. Set aside.
- In a small bowl, add Apple Cider Vinegar, Olive Oil, Honey, Kosher Salt, Black Pepper and whisk until well combined.
- Drizzle the dressing ingredients over the vegetables, and toss to evenly coat.
