Ever go shopping and see fruit on sale, so you buy way too much? I do this. Especially if there is gorgeous looking fruit at the bulk store. I recently bought up a huge bulk box of the most gorgeous peaches. When I do this I love to make the Jewish classic, fruit compote.
Fruit compote can be made in bulk and jarred or frozen for later use. I like to freeze up a big batch and then pull it out when I need a last minute dessert. I’ll warm it up and serve it with whipped cream or a scoop of ice cream. And it comes in at only 4 Weight Watchers Freestyle points per serving! So you can enjoy this treat without blowing your diet. 😉

Ingredients:
- 4 Cups of Fresh Fruit, peeled and cut into chunks
- 1 Tablespoon Lemon Juice
- ½ Cups Sugar (can sub with coconut palm sugar)
- ½ Cups Water
Instructions:
- Preheat oven to 350.
- Combine all ingredients in an 8x8 pan until evenly mixed.
- Cover and bake for an hour at 350.
