5 Delicious Ways to Rescue Overripe Fruit

It’s happened to all of us.  You see that beautiful fruit on sale and envision your family noshing down on it happily.  Then a week later, there it sits on the counter, glaring at you with it’s bruises and spots.  Don’t waste a delicious opportunity! I have for you 5 very tasty options for using up those overripe treasures.

 1- Fresh Fruit Compote

Forget the cup of fruit, pull out your very own homemade compote for your kids next lunch!  This dish also makes a healthy dessert topped with a bit of ice cream or whipped cream. Try this recipe for Fresh Fruit Compote.

 2- Healthy Fruit Smoothie

One of the fastest ways to save your fruit before it spoils is to freeze it for later!  Clean and cut your fruit. Spread it out in a single layer on a sheetpan covered by parchment and pop it in the freezer.  After an hour, you can scoop up your fruit pieces and package them in a freezer-safe baggie or tupperware dish. Use up that frozen fruit by snacking or blend them into a Healthy Fruit Smoothie.

3- Crispy Fruit Chips

You can give your fruit a second life by dehydrating it.  Check out this easy recipe for Cinnamon Apple Chips. Sub in any fruit, sliced thin.  The low and slow cooking gently dehydrates your fruit pieces into crispy chips. For a chewier bite, cut them a little thicker.

Muffins are a versatile way to use almost any kind of fruit.  It’s an easy batter and not overly sweet, making them perfect for snacking or a part of a healthy breakfast.  Here are a few recipes to get you started: Summer Strawberry Muffins, Lemon-Blueberry Muffins, Carrot-Raisin Muffins

I saw a funny comic on Facebook where a middle-aged banana was schooling the newest banana about the reality of life.  The young banana thinks he is destined to be a healthy snack, and the older banana informs him that he is destined to sit there until he rots.  Just as a completely blackened banana dreams of being banana bread, the cynical banana shouts “you will never be banana bread!” I don’t know about you, but in my house this is sadly true.  One day, I can’t buy enough bananas they disappear so fast. So I buy more and no one touches a single one. I cannot even begin to understand. My quick and easy way to use up these unloved yellow treasures is Bananacakes.  Healthy Paleo, Gluten-free pancakes that are actually fluffy!
