Roasted Sweet Potatoes
So today I was a bit crazy. I posted my Shabbos and Tisha B’av menus, and then agreed to post this morning any recipes (of the ones that are mine) that anyone requested. So…here we go! These sweet potatoes are a perfect pairing with a sweet meat dish. They are savory with an herbal flavor!
Prep Time: 5 minutes Cook Time: 44-55 minutes Serves: 6
Special Equipment: Good Sheet Pan
- 3 lg. Yams, peeled & cut into wedges
- 2 TBS Olive Oil
- 1 tsp Kosher Salt
- ½ tsp Black Pepper
- 1 tsp Thyme
- 1 tsp Tarragon
- Preheat your oven to 425. Line a sheet pan with parchment.
- Combine all ingredients on a sheet pan. Mix with your fingers to coat all pieces with the oil and spices.
- Roast at 425 for 45-55 minutes until soft on the inside and caramelized on the outside. Flip potatoes once during roasting, approx. 30 minutes in.
These potatoes can be refrigerated and reheated for a Shabbos meal. They can be warmed inside your oven or on a blech or warming plate. Cook and comment.
